Even though Labor Day Weekend is over, it’s not time to put the grills away yet. We’ll be grilling for quite a while here. Two to three feet of snow is about what it takes to prevent us from grilling, but we do try to put the grill away BEFORE the snow gets that high. I think we are good for another few months on that count.
We moved back to New England in the spring of 2011. A freak snow storm on October 29th (Winter Storm Nemo) knocked out our power for almost 9 days. We used the grill in the snow for the duration of the power outage! No repeats of THAT week, please!
Burgers are the quintessential grill food. We don’t do them often but when we do, they are not your average burger. Stuffing them with bleu cheese, makes them moist, flavorful & filling. My sister, Diane, suggested using the Caramelized Onion and Roasted Garlic Jam I gave them in the burgers. That puts a special flavor burst in them. Great suggeston, Diane!
Bleu Cheese Stuffed Burgers Serves 4
- 1 pound lean ground beef
- 1/2 – 3/4 cup bread crumbs
- 1 egg
- 2 tablespoons Caramelized Onion & Roasted Garlic Jam
- (substitute 1 tablespoon of ketchup and 2 teaspoons of Worcestershire for the jam)
- 4 ounces bleu cheese in chunks
- salt & pepper to taste
Break up the ground beef into a large bowl. Add 1/2 cup of the bread crumbs, the egg and jam. Mix them all together by hand until they are well combined. If the burgers seem too moist, add small amounts of additional breadcrumbs until the burgers hold their form.
Form the mixture into 4 plump patties. With a knife, create an opening in the side of a burger, stuff in an ounce sized chunk of bleu cheese and close up the burger around the cheese. Repeat this process for the other 3 burgers.
Grill the burgers for 4 minutes on a side or to desired doneness.
Serve the burgers with your favorite toppings.
Keep those grills in use for a while longer! ~Linda
