Christmas morning is an exciting time! There are all those presents under the tree and all of my extended family gathered in the living room to open the presents. When we are all there, it is quite a crowd! It is at my parent’s house & they are seated on the couch along with my sister, Diane. Eric & I pull in chairs from the dining room. My sister, Andi, gets one of the wing chairs as does Diane’s husband Nick. Kelly & Gilbert, and Andrew get the floor along with Diane’s kids, Nickolas, Megan & Alex. Their 3 dogs, Forrest, Chip & Bewm get whatever space they can! It’s pretty calm now that the “kids” are all over 18, but when they were all small, it was pandemonium! In the best possible way!
After all the presents are opened, it is time for a big family breakfast. Diane always makes a Scrambled Egg Casserole & baked french toast. Both are great big group breakfast dishes. For a smaller gathering or those who prefer vegetarian options, try this casserole.
Spinach and Feta Casserole (adapted from bhg.com)
Makes 4-6 servings Prep Time: 20 minutes
Ingredients:
- 3 eggs, lightly beaten
- 2 cups cream-style cottage cheese
- 1 10 ounce package frozen chopped spinach, thawed and well drained
- 1/3 cup crumbled feta cheese
- 1/4 cup butter, melted
- 3 tablespoons all-purpose flour
- 2 tablespoons finely minced onion
- Dash ground nutmeg
Directions:
Preheat oven to 350º. Grease a 1-1/2-quart casserole dish then set it aside. In a large bowl, combine the eggs, cottage cheese, spinach, feta cheese, melted butter, flour, dried onion, and nutmeg.
Transfer the mixture to the prepared casserole. Bake the casserole uncovered for about 45 minutes or until the center is nearly set. (The internal temperature should reach 160º).
Allow the casserole to set for 10 minutes before serving.
