One of my favorite ways to greet a new year is with some Champagne. The sparkling & bubbling effervescence of it reminds me of the hopes and dreams I have at the start of a new year. Whether the ending year was good or not-so-good, the upcoming one always holds the promise of being better. Champagne is like a visual of that promise.
Since just popping the cork on a bottle of Champagne does not make for a very interesting recipe as a food blog post, our Champagne becomes an ingredient for a cocktail at this time of year. It also allows those who are not fond of Champagne to still celebrate with some of the bubbly stuff!
Champagne Mojito (adapted from foodandwine.com) Makes 2 drinks
Ingredients:
- 4 ounces gin
- 1 1/2 ounces simple syrup
- 1 1/2 ounces fresh lime juice
- 2-4 ounces Champagne or sparkling wine
- 8 fresh mint leaves
Instructions:
Muddle 6 mint leaves in the cocktail shaker. Fill the cocktail shaker with ice. Add the gin, simple syrup, and lime juice. Shake until the cocktail is chilled, about 2-3 minutes, then strain the drink into 2 flutes. Top with the sparkling wine and garnish with the remaining mint leaves.
