Cheers to Moms! Citrus Mimosa

Mother’s Day is that special day when we celebrate the moms in our lives (and grandmothers & aunts) and it is this weekend! Mothers do so much more than just give us all life. They’re there for us, helping, supporting, and teaching us all their lives. And in so many ways. Eric & I are both blessed with wonderful mothers that have not only always been there for us, but for our siblings as well. And for the grandchildren, too.

A great way to show Mom how much she is appreciated is to prepare wonderful food for her. (And cleaning up afterwards would probably also be really appreciated!) Whether you’re showing Mom how much you cherish her with breakfast, brunch, lunch, dinner, dessert or some combination of these, a mimosa is a great way to start.

Citrus Mimosa Cocktail

Citrus Mimosa Cocktail (adapted from myrecipes.com)

Serves 8, Recipe Time: Prep: 5 Minutes, Chill: 2 Hours

Ingredients:

  • 1/2 cup pink grapefruit juice
  • 1/2 cup orange juice
  • 1/2 cup lemon juice
  • 1/4 cup sugar
  • 1 750ml bottle sparkling wine, chilled

Preparation:

Mix all the juices and the sugar together in a pitcher and stir it until the sugar dissolves. Cover and chill the mixture for at least 2 hours or up to overnight. Divide the juice among the flutes.

Combine all the juices.

Top the flutes with sparkling wine. Serve immediately.

Add the sparkling wine to the glasses and serve.
