Inspiralized Potatoes! – Rosemary Spiralized Potatoes with Parmesan

In our family, I am known as the potato lover and Kelly is known as the pasta lover. Whenever there is a choice for the carb portion of a meal, I pick potatoes. Kelly picks pasta. (Full disclosure: Andrew also prefers pasta, while Eric and Gilbert choose rice, but the boys aren’t included in today’s story since they are way less particular and more easy going than us girls!) The one exception to Kelly’s all pasta, all the time philosophy that we have found is Eric’s roasted potato wedges made with rosemary. They’re wonderful with the roasted chicken we used to serve for Sunday dinners with Kelly.

Recently, Eric and I have been enjoying a spiralized potato dish with a similar flavor profile. The beauty of preparing the potatoes this way is the time savings over the roasted potato wedges. With the addition of Parmesan cheese in this version, these side dish potatoes get an extra flavor boost!

Rosemary Spiralized Potatoes

Rosemary Spiralized Potatoes with Parmesan (adapted from inspiralized.com)  Makes 4 servings, Prep Time: 10 minutes, Cook Time: 15 minutes, Total Time: 25 minutes

Ingredients:

  • 1 tablespoon extra virgin olive oil
  • 2 medium russet potatoes
  • 1 large clove garlic
  • salt and pepper to taste
  • 1/4 cup to 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon dried rosemary, ground
  • 1/4 cup chopped parsley for garnish

Instructions:

Using Blade D, (angel hair or thin spaghetti cutter) spiralize the potatoes.

Spiralize the potatoes.

Heat the oil in a large skillet over medium-high heat. Once the oil is shimmering, add the potato noodles the the pan, then add the garlic and season the potatoes with salt, pepper, and the rosemary. Toss the potatoes to distribute the seasonings.

Saute the potatoes with the seasonings.

Cook the potatoes, tossing occasionally, until they are cooked through and lightly browned, about 10 minutes.

Transfer the noodles to a serving platter and top them with the Parmesan cheese. Garnish the potatoes with parsley and serve.

Top the potatoes with the Parmesan & parsley & serve!
