Spring may be officially here, but it may or may not be actually here. We’ve had some nice Spring type weather recently, but still some cold, & yes, snowy days – like possibly tomorrow. Not much we can do about the weather, so instead, I’ll concentrate on what we look forward to during Spring.
Baseball season is in “full swing”, as opening day was yesterday. The robins have returned to lawns everywhere and many trees are starting to bud. The flowers won’t be too far behind.
Another sure sign of Spring (and the one that introduces today’s recipe) is maple syrup production. Sugaring season, when the sap starts flowing in maple trees, begins towards the end of winter and continues until the buds are out on the maple trees. Once enough sap is collected, it is time to boil it down into syrup. It takes about 40 gallons of sap to make 1 gallon of maple syrup. So now is the perfect time to share a recipe using a touch of that liquid gold to enhance our salmon dinner!
Maple-Mustard Salmon (adapted from foodnetwork.com)
Total Time Required: 20 minutes, Prep Time: 5 minutes, Cook Time: 15 minutes, Yields: 4 servings
Ingredients:
- 2 tablespoons Dijon mustard
- 2 tablespoons finely chopped fresh cilantro
- 1 tablespoon mayonnaise
- 2 teaspoons pure maple syrup
- Four 5-ounce salmon fillets
- kosher salt and freshly ground black pepper
Directions:
Set the grill to medium-high heat or preheat the oven to 400º F.
Mix together the mustard, 1 tablespoon of the cilantro, the mayo, and maple syrup in a bowl.
Put the salmon fillets on a plate (or a foil lined baking sheet) and sprinkle them with 1/4 teaspoon each salt and pepper. Spread some of the mustard mixture evenly over each fillet.
Grill (or bake) the fillets until they are just cooked through, about 10 to 12 minutes.
Sprinkle them with the remaining 1 tablespoon of cilantro and serve.
