A Simple Trick – Creamy Scrambled Eggs

Based on what I’ve been seeing on social media, many people are getting sick of all this cooking at home. And I can’t say that I blame them. While Eric & I really enjoy cooking together (and dancing around each other trying to work in concert within our small kitchen during meal prep!) we are not used to putting together quite this many meals a week. Simple ways to enhance the prep or the food are what many of us are seeking right now. This trick for making creamy & fluffy scrambled eggs is a winner.

Scrambled is the way I prefer my morning eggs. There are many additions one can make to the eggs to make them tastier. (Cheese is my favorite!) And while taste is a high priority, texture is also important in scrambled eggs. They can get kind of rubbery when whisked together with water. Many find that whisking the eggs together with milk makes for fluffier eggs. Our problem is we don’t usually have milk on hand now that Andrew and Gilbert no longer live with us. (Both of them can individually go through a gallon of milk in less than 2 days!) But what we often do have on hand is plain Greek yogurt. I use it for the base of dips and as a substitute for mayonnaise whenever possible, among its other uses. So it was an easy addition to our egg breakfast this week. And it truly made the eggs creamier and fluffier. The recipe can easily be scaled up for larger groups (when permitted!) by adding 1 teaspoon of yogurt for each additional egg used. Two eggs per person would be the standard serving size.

Creamy Scrambled Eggs

Creamy Scrambled Eggs (adapted from delish.com) Makes: 1 serving, Total Time Required: 8 minutes, Prep Time: 5 minutes

Ingredients:

  • 2 large eggs
  • 2 teaspoons plain Greek yogurt
  • 1/2 tablespoon butter
  • 2 teaspoons scallions, finely chopped
  • kosher salt, to taste
  • freshly ground black pepper, to taste

Directions:

In a medium bowl, whisk together the eggs and the yogurt, until thoroughly mixed.

Whisk together the eggs and yogurt.

In a medium nonstick pan over medium-low heat, melt the butter. When it is completely melted, add the eggs.

Add the egg mixture to the hot skillet.

When the eggs start to set, use a rubber spatula to gently move the cooked portion around in the pan.

Gently stir the eggs when they begin to set.

When the eggs are almost to the desired doneness, fold in the scallions.

Add the scallions to the eggs before they are completely set.

Remove the eggs from the pan, season with salt and pepper to taste, and serve.
