Melty & Crisp! Cheddar & Apple Grilled Cheese Sandwich

The cool, rainy weather that is typical of this time of year is settling in for us this week. This weather pattern started over the past weekend and is predicted to persist all week. It is a grilled cheese and soup kind of week. I’m starting off with a grilled cheese selection.

Living close to Wisconsin, where the state slogan is “America’s dairyland,” the state beverage is milk, the state domestic animal is the dairy cow, and the rest of the US calls Wisconsonites “cheeseheads,” you know they also produce wonderful cheeses up there. We keep an ample supply of Wisconsin cheeses on hand for many and various purposes. Today, the purpose of the cheddar cheese in the fridge was to make these awesome sandwiches that also include a Granny Smith apple. The combination of creamy cheese and tart apple is crisp, bright, and sunny to ward off the dreary weather. (I like the crisp & tart taste of Granny Smith apples, but any apple can be used here!)

Cheddar & Apple Grilled Cheese Sandwich

Cheddar & Apple Grilled Cheese Sandwiches (adapted from foodnetwork.com)

Total Time Required: 15 minutes, Active Time: 10 minutes, Makes: 2 sandwiches

Ingredients:

  • 4 slices sourdough bread
  • 6 1/2-ounce slices sharp cheddar cheese
  • 1/2 apple, cored and thinly sliced
  • 2 tablespoon unsalted butter

Ready to start assembling the sandwiches!

Directions:

Put 2 slices of bread on a cutting board or work surface. Top each slice with two slices of cheese. Layer on the apple slices next.

Layer some cheese then the apple slices.

Top the apples with a third slice of cheese.

Add another layer of cheese.

Butter the top side of the second piece of bread for each sandwich, using 1/2 tablespoon of butter for each one. Place the second slice on bread on top of the sandwich, buttered side facing up, and press down lightly.

Butter the tops sides of the top piece of bread.

Heat 1 tablespoon of butter in a large skillet over medium-low heat. Add the sandwiches to the pan with the buttered bread facing up and cook them until the bread toasts and the cheese is slightly melted, about 3 to 5 minutes.

Into the frying pan!

Flip the sandwiches over with a spatula. Lower the heat slightly and cook the sandwiches until the other side is toasted and the cheese is melted, about 3 minutes more.

Nice & toasty golden brown!

Cut the sandwiches in half and serve immediately.

Halve the sandwiches and serve!
