I have been a baker since I was a young adult. I absolutely prefer baking to cooking. Baking is fun and the results are (usually) a sweet treat. Cooking is more of a necessary chore to me. (Fortunately, Eric likes to cook!) There are less occasions to bake for right now, but that doesn’t deter me from making a batch of cookies when a new recipe sparks my interest. These cookies did just that by combining almonds and cinnamon into one cookie.
When our kids were growing up, there were two specific cookies that they always requested. The origins of my almond sugar cookie recipe are lost to me, but my cinnamon cookie recipe came from a Southern Favorites booklet given to me by a dear friend. These almond cinnamon butter cookies are a delicious mash-up of both of those favored cookies.
Almond Cinnamon Butter Cookies (adapted from allrecipes.com) Total Time Required: 30 minutes, Prep Time: 10 minutes, Cook Time: 15 minutes, Cooling Time: 3 minutes, Yields: 16 cookies
Ingredients:
- 2 cups blanched almond flour
- 1/2 cup butter, softened
- 1 egg
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 2 tablespoons (1/2 ounce) sliced almonds
Directions:
Preheat the oven to 350º F. Line a baking sheet with a Silpat mat or parchment paper.
Combine the almond flour, butter, egg, sugar, vanilla extract, and cinnamon in the bowl of a stand mixer. Mix until well combined.
Roll the dough into 1-inch balls.
Place them on the prepared baking sheet and press down with a fork twice to make a criss-cross pattern.
Add a few sliced almonds to the tops of each cookie.
Bake the cookies in the the preheated oven until the edges are golden, about 15-20 minutes.
Cool on the baking sheet for 3 minutes before removing to a wire rack to cool completely. Enjoy!
