World Oceans Day – Asian Grilled Salmon

Today is World Oceans Day and you may be asking, “What is that?!” It is the United Nations day for celebrating the role oceans play in our everyday lives. The hope is to inspire humanity to take action to protect oceans and use marine resources more sustainably. We don’t often think about it, but oceans are a life source, supporting humans and every other organism on the planet by providing more than half of the Earth’s oxygen and acting as the chief climate regulator. Additionally, oceans are a major source of food and medicine.

In support of the mission of the day, we are enjoying a salmon dish tonight. The fish comes from Sitka Salmon, the Community Supported Fishery we belong to that provides members with responsibly caught Alaskan salmon and other fish. A simple (but delicious!) Asian influenced sauce marinates the grilled salmon for a fantastic summer meal!

Asian Grilled Salmon

Asian Grilled Salmon (adapted from Ina Garten via foodnetwork.comTotal Time Required: 35 minutes, Prep Time: 5 minutes, Marinade Time: 10 minutes, Cook Time: 10 minutes, Rest Time: 10 minutes

Makes: 4 servings

Ingredients:

  • 2 pounds skin-on salmon, cut into 4 pieces
  • 2 tablespoons Dijon mustard
  • 3 tablespoons soy sauce
  • 6 tablespoons olive oil
  • 1/2 teaspoon minced garlic

Directions:

Whisk together the mustard, soy sauce, olive oil, and garlic in a small bowl.

Whisk together the marinade ingredients.

Drizzle half of the marinade onto the salmon and allow it to sit for 10 minutes.

Brush half the marinade over the salmon.

Meanwhile, light the grill and brush the grilling rack with oil to keep the salmon from sticking.

Place the salmon, skin side down, on the hot grill. Discard the marinade the fish was in. Grill the salmon for 4 to 5 minutes, depending on the thickness of the fish.

Start with the salmon on the grill, skin-side down.

Turn it over carefully with a wide spatula and grill it for another 4 to 5 minutes. The salmon will be slightly raw in the center, but will keep cooking as it sits.

Turn the salmon over and continue grilling.

Transfer the fish to a plate, skin side down, and spoon the reserved marinade over the top of it. Allow the fish to rest for 10 minutes.

Spoon the rest of the marinade over the fish and allow it to rest.

Remove the skin and serve. It can also be made ahead of time and served at room temperature or chilled.
