Looking back through the recipes I have posted around Father’s Day over the eight years of this blog, I have featured either a burger or steak recipe six times. That’s because most of the males in my life love grilling and beef, even if they are not yet fathers. So, as promised on Tuesday, I am presenting a grilled steak recipe today. It makes a great dinner for meat-lovers and is quick and easy, so there is less time spent prepping the meal and more time spent with Dad this Father’s Day weekend.
This recipe couldn’t get any easier. Basil pesto and butter are mixed together, then served on top of a grilled steak that is seasoned with salt & pepper. And yet, it is full of flavor and delicious. Enjoy!
Skirt Steak with Pesto Butter (adapted from foodnetwork.com)
Total Time Required: 15 minutes, Yields: 4 servings
Ingredients:
- 1-1/2 pounds skirt steak
- kosher salt and freshly ground black pepper
- 1/4 cup basil pesto
- 4 tablespoons unsalted butter, softened
Directions:
Preheat the grill to medium-high heat. Coat the rack with cooking spray. Sprinkle the steak with salt and pepper on both sides. Cook, turning once, until the steak is charred on both sides and at the desired doneness. Medium rare will take about 3 – 4 minutes, and have an internal temperature of 135º F.
Meanwhile, whisk together the pesto, butter and a pinch of salt and pepper in a small bowl.
When cooked, transfer the steaks to a cutting board to rest for 5 minutes. Slice the steaks into 4 portions and plate each piece. Top each steak with a dollop of the pesto butter. Serve immediately.
