With grilling season upon us, we are grilling as much as possible. That includes the vegetables for dinner. First up is a grilled asparagus recipe. (Because asparagus is one of the first veggies available locally early in the growing season, it is one of Eric’s favorite veggies, and Father’s day is coming up in 9 days!) More grilled veggies recipes will be coming throughout grilling season.
Dill is the flavor enhancing star of this recipe. Typically, we associate dill with pickles, but it can do so much more than turn cucumbers into pickles. Mixed into the melted butter that coats the asparagus before it is grilled in this recipe, the chopped, feathery fronds of dill add a bright, grassy, and slightly sweet flavor to the dish that enhances the fresh taste of the asparagus. As the veggie side dish, this pairs well with all the leading proteins. We enjoy it most often with beef, chicken, salmon, or portobello mushrooms.
Asparagus in Dill Butter (adapted from bhg.com) Total Time Required: 20 minutes, Prep Time: 10 minutes, Grill Time: 7 – 10 minutes
Makes: 4 servings
Ingredients:
- 1 pound asparagus spears
- 2 tablespoons butter, melted
- 1 tablespoon snipped fresh dill
- 1 clove garlic, minced
- 1/4 teaspoon cracked black pepper
- grated Parmesan cheese for serving
Directions:
Snap off and discard the woody ends of the stems of the asparagus. On a platter, drizzle the asparagus with the melted butter and sprinkle the spears with the dill, garlic, and pepper. Toss to combine.
Preheat the grill to medium heat. Place the asparagus spears on the rack of the grill. Grill for 7 to 10 minutes or until the asparagus is crisp-tender, rolling the spears occasionally to ensure even cooking, and closing the lid between turnings.
Transfer the asparagus to a serving dish when done. Sprinkle with Parmesan cheese and serve.
