Blueberries for Breakfast – Blueberry Oatmeal Breakfast Bars

It is still fresh blueberry season and I am still enjoying baking with them. Over the weekend, I needed a portable breakfast to feed a bunch of hungry sailors after they got underway on a day long sailing trip. I went with this breakfast bar. It’s made with old fashioned oats, half of which are ground in a food processor to the consistency of flour. Any type of milk can be used, and due to lactose intolerances, my version uses almond milk. For those who are not fans of coconut, the shredded coconut atop the bars can be omitted.

Blueberry Breakfast Bars

Blueberry Oatmeal Breakfast Bars (adapted from allrecipes.com) Prep: 15 mins, Cook: 35 mins, Additional: 10 mins, Total: 60 mins, Yield: 9 bars

Ingredients:

  • 2 cup whole oats, divided
  • 1/2 cup brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup almond milk
  • 2 eggs
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 cup blueberries
  • 1/2 cup chopped walnuts
  • 1/3 cup shredded coconut

Directions:

Preheat the oven to 350º F. Grease an 8-inch square baking dish and set it aside. Process 1 cup of the whole oats in a food processor until finely ground.

Process 1 cup of oats to a flour-like consistency.

Combine the whole oats, oat flour, brown sugar, salt, and baking soda together in a large bowl.

Mix together the oats, oat flour, brown sugar, salt, and baking soda.

Stir in the almond milk, eggs, butter, and vanilla extract until it is all well combined.

Add in the milk, melted butter, eggs, and vanilla.

Fold in the blueberries and walnuts.

Fold in the blueberries and walnuts.

Spread the mixture into the prepared baking dish.

Transfer the mixture to the prepared baking dish.

Top the mixture with the shredded coconut.

Sprinkle the coconut over the top.

Bake the pan in the preheated oven until the edges are golden and the coconut is brown, about 35 minutes. Cool the bars in the pan for 10 minutes.

Cool the bars for at least 10 minutes.

Cut it into squares and serve.
