Fish Dish! – Cardamom Maple Salmon

With Lenten season upon us, we’ll be eating more fish over the next 40 days. As we progress towards Easter, we will also be approaching Spring. I am definitely ready for it. But we’re not there quite yet.

But we are in maple sugaring season. That is the time when Winter isn’t quite done with us, but Spring is showing us glipses of the better weather to come. When the days are bright and sunny with temperatures over 40, but the thermostat still drops below freezing overnight, the sap of maple trees starts to flow. And the sugarmakers tap the trees, collect the sap, boil it down, and turn the collected sap into maple syrup.

So what do these two events (Lent and maple sugaring) have to do with each other? Both happenings are reflected in the following recipe. Salmon is flavored with some Indian-inspired seasonings that are given a sweet twist by the addition of maple syrup. The result is exceptional flavor in a delicious and unique dish!

Cardamom Maple Syrup

Cardamom Maple Salmon (adapted from allrecipes.com) Total Time Required: 25 minutes, Prep Time: 15 minutes, Cook Time: 10 minutes

Ingredients:

  • 1-1/2 teaspoons salt
  • 1 teaspoon paprika
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground black pepper
  • 1/4 cup olive oil
  • 2 tablespoons maple syrup
  • 2 pounds salmon fillets, cut into 3-inch pieces

Directions:

Stir the salt, paprika, cardamom, coriander, and black pepper together in a bowl.

Start with the spices.

Add the oil and maple syrup to the spices and stir until it is well combined.

Combine the spices with the oil and maple syrup.

Preheat a non-stick frying pan over medium-high heat. Dredge the salmon pieces through the maple syrup mixture until it is evenly coated on all sides.

Cook the salmon in the preheated pan, covered, until the fish flakes easily with a fork, about 5 to 7 minutes per side and has reached an internal temperature of 135ºF.

Cook the salmon . . .

. . . about 5 minutes per side.

Serve with desired sides.
