For Father’s Day – Rib Eye Steak with Onion Blue Cheese Sauce

Father’s Day is up next on the event calendar. I’m grateful for the fathers in my life: my own father who provided for my two sisters, myself, and our mother during our growing-up years and my grandfather who was a positive and loving influence in my life.

I am also very grateful for the perfect-for-me man that I married who has provided for our own family in every way. He also had very strong role models in his father and grandfathers.

While most of these men are no longer with us, we will be remembering them all this Father’s Day while we celebrate. I think they all would have loved this steak recipe. Grilling was a favorite way to cook for these men and choice cuts of beef were reserved for special occasions. This steak gets an additional flavor boost from the onion & blue cheese sauce that accompanies it.

Ribeye Steak with Onion Blue Cheese Sauce

Rib Eye Steak with Onion Blue Cheese Sauce (adapted from Ree Drummond via foodnetwork.comTotal Time Required: 35 minutes, Prep Time: 15 minutes, Cook Time: 20 minutes, Yield: 4 servings

Ingredients:

  • 4 rib eye steaks (about 5 ounces each)
  • salt and freshly ground black pepper
  • 4 tablespoons butter, softened
  • 1 large yellow onion, sliced
  • 1 cup heavy cream
  • 3 to 4 tablespoons Worcestershire sauce
  • 1 cup crumbled blue cheese

Directions:

Preheat the grill to high. Sprinkle the steaks with salt and pepper.

Salt & pepper the steaks.

Grill the steaks until they are medium-rare, about 3 to 4 minutes per side. Remove them from the heat and cover them to keep them warm while making the sauce.

Grill the steak for 3-4 minutes a side.

Melt the butter in a large skillet over medium-high heat, and then sauté the onions until they are golden brown, about 7 to 8 minutes.

Sauté the onions in the butter . . .

. . . until they start to brown.

Pour in the cream, add a dash of salt and pepper, and the Worcestershire sauce.

Add the cream, salt, pepper, & Worcestershire sauce to the onions.

Let the sauce bubble up, then add the blue cheese and stir it all together to melt the cheese, adding more pepper or Worcestershire sauce, if desired.

When the sauce is bubbling, add the blue cheese to the pan.

Plate the steaks and spoon the sauce over top to serve.

Serve the sauce over the steaks.
