Sometimes in our household, the vegetable side dish (which I insist upon) is an afterthought. I tend to concentrate on the main dish when planning the meal and while I always want a veggie to go with it, I sometimes forget it during the planning phase. When in the situation where I have failed to properly plan, I rely on my stock of easy vegetable accompaniments. This green bean recipe is one of them.
Here, roasted green beans are tossed in a flavorful balsamic vinegar reduction. The beans can be served with a sprinkle of Parmesan cheese to add extra flair to this simple yet delicious dish.
Balsamic Green Beans (adapted from betterrecipes.com) Total Time Required: 30 minutes, Prep Time: 10 minutes, Cook Time: 20 minutes, Makes: 10 servings
Ingredients:
- 21/2 pounds fresh green beans, trimmed
- 2 tablespoons extra virgin olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1/2 cup balsamic vinegar
- grated Parmesan cheese for serving
Directions:
Preheat the oven to 425º F. Combine the green beans and olive oil in a large bowl. Gently toss them together to coat. Transfer the green beans to a large baking sheet. Season the beans with salt and ground pepper.
Roast the green beans for 20 minutes or until well browned.
While the beans are roasting, warm the balsamic vinegar in a small saucepan over medium heat. Cook for 9 minutes or until the vinegar has thickened.
Combine the balsamic reduction and the green beans in a large bowl.
Serve warm with some grated Parmesan cheese, if desired.
