From the Sea – Mediterranean Baked Halibut

With the ‘Food Lovers Holiday’ just behind us, we’re making a few lighter dishes this week before we jump into the Christmas holiday foodstuffs. First up is a halibut recipe.

Over this past Summer, we started experimenting with halibut recipes. Halibut is a member of the flounder family and the largest species of flatfish. The mild flavor of the white flesh that is high in protein, minerals, vitamins, and omega-3 fatty acids makes Pacific halibut a highly sought after food source.

Halibut is also a popular target for sport fishermen due to their large size. They can weigh up to about 500 pounds and grow to more than 8 feet long. Fortunately, only a pound of fish is needed for two servings of this recipe. No need to take up sport fishing to enjoy this wonderful fish dish!

Mediterranean Baked Halibut

Mediterranean Baked Halibut (adapted from thedizzycook.com) Total Time Required: 20 minutes, Prep Time: 5 minutes, Cook Time: 15 minutes, Makes: 2 servings

Ingredients:

  • 1 pound halibut
  • 2 tablespoons sun-dried tomatoes, chopped
  • 1 tablespoon mayonnaise
  • 2 tablespoons plain Greek yogurt
  • 2 garlic cloves, minced
  • 1/4 teaspoon dried oregano
  • dash of red pepper flakes
  • 1 tablespoon fresh basil, chopped
  • olive oil, kosher salt, and fresh pepper to taste

Directions:

Preheat oven to 425ºF. Mix together the chopped sun-dried tomatoes, mayo, Greek yogurt, garlic, oregano, and red pepper flakes.

Combine the sun-dried tomatoes, mayo, Greek yogurt, garlic, oregano, and red pepper flakes.

Coat a small baking sheet with a dash of olive oil and place the fish on top, skin side down. Sprinkle the fish with a pinch of kosher salt. Spread the yogurt/tomato mixture over the top of the fish.

Coat the fillet with the yogurt/tomato mixture.

Bake the fish in the preheated oven for 15-17 minutes, until it reaches an internal temperature of 135ºF. Remove the fish from the oven.

The fish is done!

Top the fish with the fresh chopped basil.

Sprinkle the baked fish with some fresh basil.

Serve.

Dinner is served!
