For My Sister! – Oreo Cheesecake Bites

For as long as I can remember, my sister Diane has been a fan of Oreo cookies. With her in mind, I recently tried a quick and easy dessert recipe using Oreos both for the base of these mini cheesecakes and as a component of the filling. I loved them as did the family members who taste tested them with me.

There’s no cooking required to make these delectable little bites of cheesecake. Don’t let the chilling time be a detriment. They come together in about 20 minutes. After spending the day baking for Andrew’s birthday last month, I quickly put together this recipe as well. They went right into the fridge afterwards and were ready to be enjoyed and shared the next day. Simple and delicious!

Oreo Cheesecake Bites

Oreo Cheesecake Bites (adapted from thepioneerwoman.com) Total Time Required: 6 hours 20 minutes, Prep Time: 20 minutes

Yield: 16 servings

Ingredients:

  • 28 Oreo chocolate sandwich cookies
  • 12 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 3 tablespoons sour cream
  • 1 teaspoon vanilla extract
  • pinch of kosher salt
  • 1/2 cup heavy cream

Directions:

Line 16 muffin tin wells with paper liners. Place 1 Oreo in each of the liners. Place the remaining 12 Oreos in a food processor or use a rolling pin to roughly crush them.

Place an Oreo in each of the muffin liners.

In the bowl of stand mixer fitted with a paddle attachment, beat the cream cheese on medium speed until smooth, about 2 minutes.

Beat the cream cheese until smooth.

Add the sugar, sour cream, vanilla, and salt. Beat until the mixture is smooth and creamy, about 2 more minutes.

Add the sugar, sour cream, vanilla, and salt to the cream cheese.

In another bowl, whisk the heavy cream until stiff peaks form.

Whip the cream to stiff peaks.

Add the whipped cream to the cream cheese mixture and fold them together just until combined.

Add the whipped cream to the cream cheese mixture.

Fold in 1 cup of the crushed Oreos until combined.

Fold in some of the crushed Oreos.

Spoon the cream cheese mixture into each muffin liner (about 1/4 cup each) and smooth the top.

Spoon the mixture into the muffin liners.

Sprinkle the cheesecake bites with the remaining Oreos crumbs.

Sprinkle the remaining cookies over top.

Chill the cheesecake bites until firm and set, at least 6 hours. The cheesecake bites can be made up to 2 days in advance. Store them in an air-tight container in the refrigerator.

Chill well before serving.
