Because we are such big fans of shrimp dishes, we prepare shrimp for dinner frequently. It is a quick and easy (read last minute) menu idea. It can be taken out of the freezer, (I always have raw shrimp in the freezer) then thawed, prepared, and cooked in a very short amount of time.
In the Summer, we like to grill the shrimp. It usually takes longer for the grill to heat up than it takes for the shrimp to cook on it! The key to grilling shrimp is using skewers. Here, the crustaceans are threaded onto skewers and cooked briefly, just 2-3 minutes per side. Dinner can be on the table and ready in little more than half an hour. That’s my idea of a great Summer meal!
Garlic Grilled Shrimp (adapted from spendwithpennies.com) Total Time Required: 35 minutes, Prep Time: 30 minutes, Cook Time: 5 minutes, Serves: 4
Ingredients:
- 1 pound shrimp, peeled and deveined
- 5 cloves garlic crushed, divided
- 1/3 cup olive oil
- 2 tablespoons + 1 teaspoon chopped parsley, divided
- 1 tablespoon fresh basil chopped
- 2 teaspoons lemon juice
- 1 tablespoon tomato paste
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup butter melted
- lemon wedges for serving
Instructions:
Combine the olive oil, 4 cloves of garlic, 2 tablespoons of the chopped parsley, the basil, lemon juice, tomato paste, and salt & pepper for the marinade in a bowl and whisk it all together.
Add the shrimp to the bowl and allow it to marinate for at least 20 minutes.
Preheat the grill to medium heat. Melt the butter and combine it with the remaining garlic and the remaining teaspoon of parsley. Set the garlic butter aside.
Thread the shrimp on skewers and grill it for 2-3 minutes per side.
Remove the shrimp from the skewers and place them a serving bowl. Drizzle the garlic butter over the shrimp.
Serve with lemon wedges.
