Fall-ing For Apples – Apple Bread

Apple season is here & Kelly is ecstatic! Apples are her favorite fruit and I have yet to find a way to use them that she doesn’t like. Apple Pie has been the request for her birthday “cake” since she was 10 years old. If we had found the Apple Cheddar Sandwich recipe when she was younger, I’m positive that would have been what she took for school lunches, well before they became her fall go-to for law school lunches. Kelly got me started on the food blogging path with an Apple-Cheddar Mac & Cheese recipe. In the three years of this twice-weekly blog, apples have been featured 9 times. (The other seven recipes are my mom’s Apple Bavarian Torte, my mother-in-law’s Jewish Apple Cake, Apple Strudel Bread, Spiced Apple Cider Muffins, Apple Cider Caramels, Apple Stuffed Pork Tenderloin and Eric’s great-grandmother’s Applesauce!)

This apple season, I’m starting off with an apple bread that has gotten Kelly’s seal of approval. It’s a safe bet that there will be other apple recipes coming before apple season is finished!

  • 1/2 cup oilapple bread (1)
  • 1/2 cup applesauce
  • 3 eggs
  • 2 cups sugar
  • 1 teaspoon vanilla
  • 3 cups (about 1 1/4 pounds) apples, diced
  • 3 cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Preheat the oven the 325º.  Combine the oil, applesauce, eggs, sugar & vanilla.  Add in the salt, baking soda, cinnamon and flour gradually.  Add the apples into the batter.

Bake in 2 greased loaf pans for 70 minutes.

Cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely. Sprinkle with additional sugar, if desired.
