Flag Inspired Food – Arugula & Strawberry Salad

Memorial Day is one of the holidays that I love to serve foods that are naturally the colors of our flag. There are plenty of options for the red hues. Blueberries are always a good representative of blue. There are also many choices when it comes to providing something white for the dish.

This year’s ‘flag’ dish (as I like to call the red, white, & blue themed foods I am partial to) uses red strawberries and white feta cheese. I settled for blue bowls to serve the salad in, but adding blueberries would be another option. This simple salad comes together very quickly. Arugula provides a peppery background for the salad and is enhanced with sweet strawberries, crunchy toasted almonds, and salty feta cheese. The dressing is a simple mix of balsamic vinegar and olive oil with a twist of sea salt. Fast & easy yet elegant, to get the celebration started!

Arugula & Strawberry Salad

Arugula and Strawberry Salad (adapted from allrecipes.com) Total Time Required: 10 minutes, Prep Time: 10 minutes, Yield: 4 servings

Ingredients:

  • 4 cups arugula
  • 8 strawberries, stemmed and sliced
  • 2 tablespoons aged balsamic vinegar
  • 2 tablespoons extra-virgin olive oil
  • 3 tablespoons toasted almonds
  • 1-1/2 ounces crumbled feta cheese
  • sea salt to taste

Directions:

Mix the arugula, strawberries, almonds, and feta cheese together in a large bowl.

Combine the arugula, strawberries, almonds, and feta cheese.

Add in the balsamic vinegar, olive oil, and sea salt.

Add the dressing ingredients to the salad.

Toss until the salad is well combined. Serve immediately.

Serve immediately.
