Summer’s Winding Down Lemon-Lime Bars

Way back in May, I posted a lemon bar recipe that was really well received . . . by most people. Others were hesitant to try them due to the tequila in the ingredient list. That’s a valid reason for not trying something. And an excuse for me to try out more lemon-lime desserts!

Gilbert’s family (my A-team of testers for any lemon or lime flavored baked goods I make) loved these bars. With good reason. The hint of lime in the crust wonderfully plays off the tang of the lemon in the filling. So, if you need a citrus-y alternative to the Tequila-Lime-Macaroon Bars to wrap up a summer celebration, these would be a great choice!

Lemon-Lime Bars

Lemon-Lime Bars (adapted from tasteofhome.com)

Prep time: 20 minutes, Bake time: 20 minutes   Yields: 24 bars

Ingredients:

Base:

  • 1 cup butter, softened
  • 1/2 cup confectioners’ sugar
  • 2 teaspoons grated lime peel
  • 1-3/4 cups all-purpose flour
  • 1/4 teaspoon salt

Filling:

  • 4 eggs
  • 1-1/2 cups sugar
  • 1/4 cup all-purpose flour b
  • 1/2 teaspoon baking powder
  • 1/3 cup lemon juice
  • 2 teaspoons grated lemon peel
  • Confectioners’ sugar for dusting

Directions:

In a large bowl, cream the butter and confectioners’ sugar together until it is light and fluffy. Beat in the lime peel. Combine the flour and salt and gradually add it into the creamed mixture. Mix it well.

Put together the cookie base.

Press the base into a greased 9-inch x 13-inch baking dish. Bake the base at 350° F for 13-15 minutes or just until the edges are lightly browned.

Meanwhile, in another large bowl, beat together the eggs and sugar. Combine the flour and the baking powder and gradually add them to the egg mixture.

Cream together the eggs and sugar.

Stir in the lemon juice and peel, then beat them until they are frothy. Pour the filling over the hot crust.

Pour the filling over the base.

Bake the bars for 20-25 minutes or until they are a light golden brown. Cool the bars on a wire rack.

Bake the bars until they are a browned.

Dust them with confectioners’ sugar when they are completely cooled.

Sprinkle the confectioners’ sugar over the cooled bars.

Cut the bars into squares. Store them in the refrigerator.
