April Fools’ Food – French Onion Breaded Chicken

Today may be April Fool’s Day, but Mother Nature has been playing tricks on us for a few days now. First, we had temperatures in the 60s. And one would think we would be so happy with that. But those warm temperatures came with tons of rain, high winds, and thunderstorms, leading to flooding and damage. Then she dropped us back into Winter and hit us with snow showers and freezing temperatures. And today’s prediction is for some sunny weather, but it will continue to be cold. So, we’re staying with food that is more on the comfort side than the light Spring fare side.

This recipe uses just 5 ingredients. The chicken stays super juicy thanks to a thin layer of mayonnaise mixed with some crushed garlic brushed over it. Dry onion soup mix added to basic bread crumbs given the chicken a huge flavor boost. Not a lot of work and not a lot of time, and yet so delicious. This is no April Fool’s prank!

French Onion Breaded Chicken

Total Time Required: 35 minutes, Prep Time: 10 minutes, Cook Time: 25 minutes, Makes: 4 servings

Ingredients:

  • 1 cup bread crumbs
  • 1-ounce package dry French onion soup mix
  • 1/3 cup mayonnaise
  • 2 garlic cloves, crushed
  • 4 skinless, boneless chicken breasts

Directions:

Preheat the oven to 425º F. Mix the bread crumbs and the dry soup mix together in a small bowl.

Combine the bread crumbs with the dry soup mix.

Mix the mayonnaise and garlic together in a separate bowl.

Mix together the mayonnaise and garlic.

Place the chicken breasts on a baking sheet. Coat them with the mayonnaise mixture.

Coat the chicken with the mayo mixture.

Cover the coated breasts with the bread crumb mixture.

Cover the breasts with the bread crumb mixture.

Bake the chicken on the middle rack of the preheated oven until the chicken is no longer pink in the center, the juices run clear, and an instant-read thermometer inserted into the thickest part of the breast reads 165º F, about 20 minutes. Serve immediately.
