Along with the Spicy Ketchup I posted on Friday, we’ll be cooking up some burgers for our 4th of July celebration tomorrow. Eric & I will be spending the holiday with Andrew, Kelly & Gilbert, hanging out at the lake, relaxing, and enjoying each other’s company. The weather is supposed to be just perfect for enjoying the great outdoors tomorrow. I envision lots of time outside, in and on the lake with some breaks from the fun in the sun to put together some wonderful food. Cooking as a team is something we plan on when we have the opportunity to all be together. The process is better and more fun when it is a shared process, even the cleaning up part! These burgers will be a part of our holiday tomorrow!
Spinach & Feta Turkey Burgers (adapted from allrecipes.com) Prep time: 20 minutes, Cook time: 15 minutes, Makes: 8 burgers
Ingredients:
- 2 eggs, beaten
- 2 cloves garlic, minced
- 4 ounces feta cheese
- 10 ounces frozen chopped spinach, thawed and squeezed dry
- 2 pounds ground turkey
- salt & pepper to taste
Directions:
Preheat the grill to medium-high heat and lightly oil the grate.
While the grill is preheating, mix together the eggs, garlic, feta cheese, spinach, turkey, and salt & pepper to taste in a large bowl until it is well combined.
Form the mixture into 8 patties.
Cook the burgers on the grill until they are no longer pink in the center, about 15 to 20 minutes.
