We are smack dab in the middle of cherry season and that makes me happy! When they are in season, I stock up on them. We enjoy them as is for snacks, and also for breakfast, (Cherry Breakfast Rice Bowl) and desserts, (Cherry Cheesecake Bars) side dishes, (Quinoa Salad with Cherries, Apricots & Cashews) and main dishes (Pork Tenderloin with Roasted Cherries).
I also buy extra cherries to pit and freeze for future use. The perfect use for some of those frozen cherries is in smoothies. They are a great on-the-go, drinkable breakfast for busy mornings. Using frozen cherries & frozen spinach make this version of a smoothie even more refreshing when the weather is hot. It’s a trifecta of refreshing, satisfying & yummy!
Cherry Almond Smoothie
(Adapted from Simple Green Smoothies by Jen Hansard and Jaden Sellner via cosmopolitan.com)
- 1/2 cup (1.5 ounces) frozen spinach or kale
- 1/2 pound (about 1 cup) frozen cherries
- 2 tablespoons peanut butter
- 1 1/4 cup almond milk
- 1/2 teaspoon vanilla extract
Place all the ingredients in a blender and blend until smooth. Pour into a tall glass or travel cup and enjoy!
