Super Bowl LVIII Part 1: Kansas City Chiefs – Hot Chicken Dip

Once again, the Kansas City Chiefs are in the Super Bowl, outplaying the Baltimore Ravens for the AFL Championship this past weekend. The Ravens were favored to win the game, but both the Chiefs offense and defense were on their game and delivered the win.

The Chiefs were a contender in the first-ever Super Bowl, played in 1966. With three Super Bowl victories so far, they will be making their sixth appearance on February 11th. This year’s game will be a rematch between the Chiefs and the 49ers, whom they faced off against in 2020. The Chiefs dominated that game and came away with the Lombardi trophy.

In recent years, I have posted two previous recipes for Kansas City Chiefs fans prior to those Super Bowl competitions. Barbecued Pork Sloppy Joes and Bierocks are both specialties from the team’s hometown. Both are wonderful, as is this year’s recipe, Hot Chicken Dip. This one is an appetizer, as opposed to my main dish offerings of prior years. All of them are sure to please Chiefs fans!

Hot Chicken Dip

Hot Chicken Dip (adapted from a recipe by Anne, a Chiefs’ employee via chiefs.com) Total Time Required: 70 minutes, Prep Time: 10 minutes, Bake Time: 60 minutes, Makes: 10 servings

Ingredients:

  • 1 pound chicken breast
  • 16 ounces cream cheese, softened to room temperature
  • 3/4 cup Frank’s hot sauce
  • 3/4 cup chunky blue cheese dressing
  • 2 cups (7 ounces) shredded sharp cheddar cheese
  • salt & black pepper

Directions:

Preheat the oven to 350º F. Season the chicken breast with salt and pepper and place it in a covered baking dish. Bake for 30-40 minutes, until the chicken reaches an internal temperature of 165ºF when measured with an instant read thermometer at its thickest part.

Season the chicken breast with salt & pepper.

When the chicken is cool enough to handle, shred it using two forks.

Shred the chicken.

In the large bowl of a stand mixer, combine the cream cheese with the hot sauce.

Combine the cream cheese and hot sauce.

Add the blue cheese dressing and mix well.

Add the blue cheese dressing to the dip.

Add the cooked chicken with its drippings and the shredded cheese to the dip.

Add the cooked chicken, its drippings, and the shredded cheese to the dip.

Transfer the dip to a 1-quart baking dish and bake for about 30 minutes, until it is bubbly, browned around the edges, and heated through.

Transfer the dip to a 1-quart baking dish.

Serve the dip warm with tortilla chips and/or celery sticks.
