Back to Simple – Dijon Garlic Salmon

After the abundance and indulgence of food over Thanksgiving, now seems like a really good time for a simple and healthy fish recipe. And this is a great tasting one!

A seasoned mustard sauce is slathered on salmon fillets, and baked for 20 minutes. It does not get much easier than that. Put together a side dish or two while the fish bakes, and dinner is ready! This is just the type of recipe I want to prepare and savor after the flurry of cooking and eating rich holiday meals.

Dijon Garlic Salmon

Dijon Garlic Salmon (adapted from allrecipes.com) Total Time Required: 35 minutes, Prep Time: 15 minutes, Cook Time: 20 minutes, Makes: 4 servings

Ingredients:

  • 4 6-ounce salmon fillets
  • 1/3 cup Dijon mustard
  • 4 large cloves garlic, finely chopped or crushed
  • 1 small red onion, chopped
  • 1 teaspoon dried tarragon
  • salt and pepper to taste

Directions:

Preheat the oven to 400º F. Spray a 9×13 inch baking pan with cooking spray.

In a small bowl, mix together the mustard, garlic, onion, tarragon, salt, and pepper.

Mix together the sauce ingredients.

Arrange the salmon, skin side down, in the prepared dish, and lightly coat it with the Dijon mustard mixture.

Spread the mustard mixture over the salmon pieces.

Ready for the oven!

Bake the salmon for 20 minutes, or until it flakes easily with a fork. Serve immediately.
