Even though I do not like olives, I wanted to make horiatiki, a typical Greek salad. It highlights two of my favorite summer ingredients, cherry tomatoes & cucumbers, along with red onions and feta. I kept the kalamata olives on the side, so Eric could add them to his portions and I could keep my salad olive-free. The salad was delicious and went well with the chicken we also had that night, so the recipe passed the test of being good enough to make it onto my food blog.
The next step in the process of putting a recipe on Why Go Out to Eat is the writing phase, which almost always includes some sort of research. That is when I discovered that this particular recipe is not actually the classical Greek salad recipe I thought it was. The traditional recipe includes a chopped green bell pepper as an ingredient, along with a few other differences. No matter. We loved the salad and will continue to make and enjoy it. And next time we get to Athens and visit with our secret Greek relatives, we will experience a proper horiatiki!
Greek Salad
Greek Salad (adapted from delish.com) Makes: 4 servings, Time Required: 15 minutes
Ingredients:
Salad:
- 1 pint grape or cherry tomatoes, halved
- 1 cucumber, seeds scooped out & thinly sliced into half moons
- 1 cup halved kalamata olives
- 1/2 red onion, thinly sliced
- 3/4 cup crumbled feta
Dressing:
- 2 tablespoons red wine vinegar
- Juice of 1/2 a lemon (1 1/2 tablespoons)
- 1 teaspoon dried oregano
- kosher salt & freshly ground black pepper
- 1/4 cup extra-virgin olive oil
Directions:
For the salad: In a large bowl, stir together the tomatoes, cucumber, olives, and red onion. Gently fold in the feta.
In a small bowl, make the dressing. Combine the vinegar, lemon juice, and oregano, then season the dressing with salt and pepper. Slowly add the olive oil, whisking the ingredients together to combine them.
Drizzle the dressing over the salad and serve it immediately.
