Eat More Fish! – Maple-Mustard Salmon

Eat More Fish! I “hear” that a lot in the health and nutrition articles I read. And we’re not the only ones trying to follow that advice. More and more people we know are trying to eat better and incorporate more fish and less processed food into their diets.

I have always loved salmon. My mom used to make salmon patties for dinner on Fridays during Lent. (It was either that or Mrs. Paul’s Fish Sticks when I was growing up!) I still try to eat salmon at least once a week, although usually not on Fridays. Friday is reserved for pizza around here. Last week’s salmon dish featured a mayonnaise based sauce with Dijon mustard, cilantro, and maple syrup for the fish. As my brother-in-law Nick would say, it was make-it-again good. This recipe is going in my favorites binder, the one reserved for recipes we’ll be making often!

Maple-Mustard Salmon

Maple-Mustard Salmon (adapted from foodnetwork.com) Total Time Required: 20 minutes, Prep Time: 5 minutes, Cook Time: 15 minutes, Yields: 4 servings

Ingredients:

  • 2 tablespoons Dijon mustard
  • 2 tablespoons finely chopped fresh cilantro
  • 1 tablespoon mayonnaise
  • 2 teaspoons pure maple syrup
  • Four 5-6 ounce salmon fillets
  • kosher salt and freshly ground black pepper

Directions:

Preheat the grill or oven to 400º F.

Mix together the mustard, 1 tablespoon of the cilantro, the mayonnaise, and maple syrup in a small bowl.

Mix up the sauce for the salmon.

Sprinkle the salmon fillets with salt and pepper to taste. Spread some of the mustard mixture evenly over each fillet.

Sprinkle the fillets with salt & pepper, then add the sauce to them.

Coat the grill rack with cooking spray or place some aluminum foil on a baking sheet if using the oven. Grill or bake the fillets until they are just cooked through, about 10 to 12 minutes.

These can go on the grill or in the oven.

They’re done quickly either way.

Sprinkle the fillets with the remaining 1 tablespoon of cilantro and serve.
