It’s St. Patrick’s Day and we will be celebrating all weekend! The cocktails will start tonight, but since it is Friday and it has been a very looong week, we’ll keep to our Friday Night pizza tradition for dinner and save our Irish-inspired dinner for tomorrow night. (Maybe I can talk Eric into a Baked Potato Pizza tonight!)
Anyway, while tomorrow night’s dinner is still being decided, the cocktails are all set for tonight. Eric will probably partake of a Guinness, either straight up or combined with another beer. (Like a Half & Half – Guinness Draught & Harp Lager, or a Black & Tan – Bass Pale Ale topped with Guinness Stout, or perhaps a Black & Blonde – Guinness Blonde & Guinness Draught.) I, on the other hand, prefer Irish Whiskey to beer. I’ll be drinking a Blushing Irishman while celebrating St. Patrick’s Day this weekend! See below for the recipe!

Total Time Required: 5 minutes
Yield: 1 cocktail
Ingredients:
- 1/2 grapefruit (about 3 ounces)
- 2 ounces Irish Whiskey
- 2 sugar cubes
Directions:
Using a vegetable peeler, peel the rind of the grapefruit into a long strip. Twist it into a curled shape. Juice the grapefruit. Set the peel and juice aside.
Add the whiskey and sugar cubes to a rocks glass. With a cocktail muddler, muddle the sugar cubes into the whiskey.
Add the grapefruit juice to the glass then fill it the rest of the way with ice. Serve with the grapefruit curl on the top.
