We may be getting close to the end of grilling (and mango) season, but you wouldn’t think it, given the weather here in the Midwest this week! It’s going to seem more like the height of Summer than the beginning of the Fall season.
We’re taking advantage of these bonus Summer days with another grilling recipe. Salmon is always a great protein to do on the grill and it has been a while since I’ve posted a recipe featuring this fish. And this is a perfect one for the current summery weather!
The salmon is cooked simply with a bit of salt and pepper. Mango salsa provides the flavor boost that makes this dish wonderful. Diced mango is combined with a chopped jalapeno pepper, some lime juice, and a few sliced scallions. The salsa adorns the grilled fish for a delicious evening meal to celebrate the additional days of Summer weather we are enjoying this week!
Grilled Salmon with Mango Salsa (adapted from foodnetwork.com) Total Time Required: 30 minutes, Active Time: 30 minutes, Makes: 4 servings
Ingredients:
- 1 clove garlic
- kosher salt and freshly ground black pepper
- 2 tablespoons coarsely chopped fresh cilantro
- 1 tablespoon olive oil, plus more for oiling the grill grates
- 1 jalapeno pepper, stemmed, seeded, and finely chopped
- 1 ripe mango, peeled, seeded and diced (about 1-1/4 cups)
- 2 limes, 1 juiced and 1 cut into wedges
- 2 scallions, thinly sliced
- 24 ounces skin-on salmon fillet
Directions:
Preheat the grill to medium-high heat.
Crush the garlic clove, sprinkle it with a pinch of salt, and mash them into a coarse paste using the flat side of a large knife. Mix the garlic paste with the cilantro, oil, jalapeno, mango, lime juice, and scallions in a medium bowl. Season with salt then set the salsa aside.
Pat the fish dry and sprinkle it with salt and pepper. Lightly oil the grill grates. Place the salmon, skin side-up, on the grill and cook until well-marked, about 3 to 4 minutes. Turn the salmon and continue to cook until the fish is just cooked through, about 3 to 4 minutes more.
Cut the salmon into 4 pieces and serve each piece with some mango salsa and a lime wedge.
