Every Spring when the mint starts popping up, I celebrate. We use mint constantly in the kitchen. And I am always looking for new uses for it. Mint is a perennial herb that does not quit. It grows & spreads like wildfire. If it is not contained, it will overtake any area it is planted in and invade all the surrounding areas, too. To keep it in check, I seek out recipes using it and whenever I need mint, I pull the whole plant out along with the roots & shoots of its connected offspring. That helps me to keep it in check. Somewhat.
One way to contain mint is to only plant it in containers. But if those containers are on the ground, the roots will grow out of the drainage holes in the bottom of the pot and into the dirt and spread out of its confinement. Mint does not like to be contained! So, I yank it out when it starts to overwhelm its designated area. When it grows into the lawn, it gets cut off by the lawn mower. I certainly don’t mind being engulfed in the wonderfully refreshing scent of mint while cutting the lawn! I will eventually get tired of wrestling with my wayward mint plants, but right now, I am rejoicing in its return with a mojito! This mojito uses St-Germain Elderflower Liqueur. Since being introduced to St-Germain last fall, I’ve been collecting recipes that use it. This version of a mojito is not as tart as a typical mojito. That puckering lime taste is tempered by the slightly sweet St-Germain Liqueur.
St-Germain Mojito (adapted from barnonedrinks.com)
Makes 1 drink
Ingredients:
- 12 mint leaves
- 2 ounces white rum
- 2 ounces St-Germain Elderflower Liqueur
- 1 ounce lime juice
- 1 ounce simple syrup
Instructions:
Lightly muddle the mint in a cocktail shaker.
Half fill the shaker with ice then add the rum, St-Germain, lime juice, and simple syrup. Shake for 1-2 minutes. Half fill a mojito glass with crushed ice. Pour the cocktail into the glass.
Garnish with additional mint leaves or a lime wedge.
