The Summertime drink of choice for many is iced tea. But I prefer lemonade over iced tea. My extended family are almost exclusively iced tea drinkers, although my dad also enjoys Arnold Palmers. That’s a half-n-half mix of iced tea and lemonade. So I’m not exactly sure where my affinity for lemonade comes from, but it is definitely my preference.
I typically post a new lemonade recipe here in May. That’s when I am finding the version I will drink all during the warm weather months of Summer. For some reason that I don’t understand, National Lemonade Day falls in August. Not wanting to pass up an opportunity to feature my beloved Summer staple, I post a spiked lemonade recipe each Summer around August 20th. This year’s offering is a blueberry & lemonade margarita. It hits the spot on these hot August evenings!
Blueberry Lemonade Margaritas (adapted from delish.com) Total Time Required: 25 minutes, Prep Time: 10 minutes, Cooling Time: 15 minutes, Makes: 4 servings
Ingredients:
Syrup:
- 1/2 cup granulated sugar
- 1/2 cup water
- 1 cup blueberries
- zest of 1 lime
Margarita:
- 2 tablespoons kosher salt
- 2 tablespoons granulated sugar
- 1 lemon, cut into wedges
- 8 ounces tequila
- 4 ounces triple sec
- 3 ounces lemonade
Directions:
In a medium saucepan over medium heat, combine the sugar and water and stir until the sugar has dissolved. Add the blueberries and lime zest and bring the mixture to a boil. Reduce the heat and simmer the mixture until the blueberries have burst, about 5 minutes.
Remove the syrup from the heat and allow the mixture to cool for 10 minutes, then strain it into a clean jar. Let cool completely.
On a small plate, stir together the sugar and salt. Rim each glass with a lime wedge, then dip the glasses in the sugar-salt mixture. Divide the tequila, triple sec and lemonade between 4 glasses.
Fill each glass with ice, then top each with some blueberry syrup.
Garnish the glasses with a lemon wedge and serve.
