It’s Christmas Eve, which obviously means, Christmas is tomorrow! No matter where we are spending it, Eric, myself, & the kids are always together for these two days. (The one exception was in 2020, during the pandemic. We couldn’t travel to meet in person, but we met virtually on both days.)
One of our traditions is gathering to cook and then enjoy the meal. Included in the menu is a Christmas cocktail. This year’s version features pomegranate juice with a garnish of pomegranate seeds. The pomegranate is one of the most ancient fruits. Most likely originating in Persia, after being cultivated, it spread throughout the Mediterranean and further, into India and China. The name pomegranate comes from Latin, meaning “apple of many grains” in reference to the seeds. Pomegranates are widely available in the US from September to December, making them the perfect fruit for a holiday cocktail like this one!
Pomegranate Martini (adapted from thepioneerwoman.com) Total Time Required: 5 minutes, Yield: 2 cocktails
Ingredients:
- 4 ounces pomegranate juice
- 3 ounces vodka
- 1 ounce white (dry) vermouth
- 1 ounce orange liqueur, such as triple sec
- 1/2 ounce simple syrup
- pomegranate seeds and orange twists, for garnish
Directions:
In a cocktail shaker filled halfway full with ice, combine the pomegranate juice, vodka, vermouth, orange liqueur, and simple syrup.
Cover and shake vigorously for about 15 seconds. Strain the mixture into 2 martini glasses.
Garnish the libations with a few pomegranate seeds and an orange twist.
