While we love to grill whenever the weather is warm, some nights, grilling is just not an option. We are in for a few of those kinds of nights this week. Severe evening storms are predicted due to the high daytime heat. No matter. This broiled pork tenderloin recipe with a tropical salsa epitomizes Summertime, even though it is cooked inside.
The tenderloin is spiced with a mix of coriander and salt. Coriander (the seeds of the cilantro plant) is a fresh-tasting spice, with a mildly sweet, lemony flavor. The meat is served with a mango salsa. Mangoes, one of the most commonly eaten fruits in the world, originated in Southeast Asia over 4000 years ago. They were brought to this country in the mid-1800’s. Most commercially grown mangoes available in the USA come from Florida or Mexico. Sometimes called a “tropical peach”, the flavor is a spicy and fragrant combination of peach and pineapple. This mildly seasoned, broiled pork tenderloin is a wonderful backdrop for the spicy and flavorful mango salsa.
Pork Tenderloin With Mango Salsa (adapted from realsimple.com) Total Time Required: 25 minutes, Prep Time: 10 minutes, Makes: 4 servings
Ingredients:
- 1 mango, chopped
- 2 scallions, chopped
- 1 tablespoon + 1 teaspoon olive oil, divided
- 1 tablespoon fresh lime juice
- 1/4 teaspoon crushed red pepper
- 3/4 teaspoon kosher salt, divided
- 1-1/4 pounds pork tenderloin
- 1 teaspoon ground coriander
Directions:
In a medium bowl, combine the mango, scallions, 1 tablespoon of the oil, lime juice, crushed red pepper, and 1/4 teaspoon of the salt. Set the salsa aside.
Remove the silverskin from the pork.
Preheat the broiler to high. Rub the pork with the remaining 1 teaspoon of oil. Season the tenderloin with the coriander and remaining 1/2 teaspoon of salt.
Broil the pork, turning it halfway through, until it is cooked to an internal temperature of 145ºF, about 12 to 15 minutes.
Let the pork rest for 5 minutes before slicing.
Serve the pork with the salsa.
