2023 starts this weekend and we are getting ready for our celebration! The cocktail we will be sipping on needs some time before the festivities to make and chill. The raspberry simple syrup is best to put that together early in the day to ensure it is well chilled for the event.
Champagne or prosecco is a must when I am ringing in a New Year. I use them interchangeably, but there is a difference between them. For one, they are made from different grape varietals. Champagne is a sparkling wine from the Champagne region of France. Prosecco is a sparkling wine from Northern Italy. Prosecco is sweeter and lighter in taste than its French counterpoint. These wines also differ from each other in their second fermentation procedures.
In this libation, the raspberry simple syrup pairs with and complements the lighter and sweeter flavor of prosecco beautifully!
Raspberry Prosecco Cocktail (adapted from a recipe by Valerie Bertinelli via foodnetwork.com) Total Time Required: 1 hour 30 minutes, (includes cooling time), Active Time: 10 minutes
Ingredients:
Raspberry Syrup (makes about 1 cup of syrup):
- 1/2 cup sugar
- 1 tablespoon fresh lemon juice
- 1 pint (6 ounces) raspberries
Cocktail (for each serving):
- 1 tablespoon Raspberry Syrup
- 1 teaspoon fresh lemon juice
- 3 ounces chilled prosecco
- raspberries for garnish
Directions:
For the Raspberry Syrup: Place the sugar and 1 cup of water in a medium saucepan over medium heat. Bring it to a simmer, stirring occasionally, until the sugar is dissolved, about 3 to 4 minutes.
Add the lemon juice and raspberries and simmer, stirring occasionally, until the raspberries have broken down, about 10 minutes.
Pour the mixture through a strainer and return it to the pot.
Simmer over medium heat until the syrup has slightly thickened, about 15 minutes more. Let the syrup cool completely, then pour it into an airtight container and store it in the refrigerator for up to 2 weeks. Makes: about 1 cup of Raspberry Syrup.
For the Cocktail: Add the Raspberry Syrup and lemon juice to the bottom of a champagne flute.
Fill the glass with prosecco. Add one or two raspberries to the glass. Serve.
