Ready In a Jiff – Sheet-Pan Shrimp With Tomatoes & Feta

If it seems like I post many, many recipes using tomatoes and feta cheese, that’s probably because I do! They are two ingredients that are always in our home.

Frozen, wild caught shrimp is also one of the proteins I always have on hand. Shrimp thaw and cook quickly, making them perfect for nights when we don’t know what to have for dinner and/or we are short on time to prepare the evening meal. (Getting take-out isn’t something we do much, given our propensity for culinary science.) Today’s recipe incorporates these three food items into a delicious repast.

The shrimp is coated in seasonings then quickly broiled. And that is it for the cooking part! Serve the shrimp with some chopped tomatoes, crumbled feta cheese, and some crusty bread and dinner is served!

Sheet-Pan Shrimp with Tomatoes & Feta

Sheet-Pan Shrimp With Tomatoes & Feta (adapted from cooking.nytimes.com)  Total Time Required: 30 minutes, Yield:4 servings

Ingredients:

  • 1 garlic clove
  • 1 teaspoon salt
  • 1-1/2 teaspoons dried oregano
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • black pepper, to taste
  • 1-1/2 pounds peeled shrimp
  • chopped tomatoes, crumbled feta, and crusty bread for serving

Directions:

Turn the broiler on high and position the oven rack close to the heat.

Mash the garlic clove with the salt until it forms a paste. Add the oregano, lemon juice, olive oil, and black pepper to taste. Rub the paste all over the peeled shrimp.

Rub the seasoning mixture all over the shrimp.

Spread the shrimp out on a pan and broil for 2 to 3 minutes per side.

Broil the shrimp, turning once.

Transfer the cooked shrimp to a serving bowl.

Served the shrimp topped with the chopped tomatoes and crumbled feta.
