Time for a Side – Sweet & Spicy Roasted Broccoli

Lately, it seems like main dish offerings, desserts, and drinks are the only things that are appearing in this space. It’s time to get a veggie side in here! Part of nearly every meal we partake in also includes fruit (if the meal is breakfast) or some veggies (at dinner). But those veggies haven’t gotten much airtime recently. If our entree takes some work, our vegetable side is usually simply prepared without a lot of work or fuss. Even though it often comprises more of the volume of our meal than the protein does. If the protein portion of the meal is less complicated or something we make regularly, we devote more time and effort to the creation of an outstanding accompaniment.

Since broccoli is the one green vegetable that we all agree on, we eat it often. Sweet and spicy blend together well here. Heat from the Sriracha adds a bit of a kick, balancing out the sweet of the honey. Roasting the broccoli tenderizes it and crisps up the outside of the florets. The finishing touch of sliced almonds and green onions adds wonderful crunch and additional pops of flavor to this side.

Sweet & Spicy Broccoli

Sweet & Spicy Roasted Broccoli (adapted from barefeetinthekitchen.com) Total Time Required: 20 minutes, Prep Time: 5 minutes, Cook Time: 12 – 15 minutes

Ingredients:

  • 1 pound (6 cups) broccoli, cut into bite size pieces
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon honey
  • 1-3 teaspoons sriracha, 1 for less heat, 3 for more heat
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon sliced almonds
  • 1 green onion thinly sliced

Directions:

Preheat the oven to 450°F. Place the broccoli on a large baking sheet. In a small bowl, whisk together the soy sauce, sesame oil, honey, sriracha, and pepper. Pour the sauce over the broccoli and toss it well to coat.

Put together the sauce.

Spread the broccoli across the lined baking sheet. Roast for 12-15 minutes, until the broccoli is tender and the edges are turning brown. Remove the broccoli from the oven and transfer it to a bowl. Top with the green onions and the almonds and serve hot.

Top with the almonds and scallions and serve.
