Goldilocks+ Scenario – Southern Pineapple Lemonade

As is my habit when Summer approaches, I keep lemonade in the fridge to drink. To add a delicious twist to my beverage of choice for the warmer months, I chose a pineapple-flavored lemonade recipe. It featured grilled, fresh pineapple. Sounds amazing, right?! But the finished product was too watery and didn’t have much pineapple or lemon flavor.

Not willing to give up so easily, I found four additional pineapple lemonade recipes, each a bit different from the others. We did a blind taste test of all of them. One was too tart, one was too sweet, one had too little pineapple flavor. And one was just right! (Hence the Goldilocks+ Scenario title.) Now, I am ready for Summer to begin!

This is a non-alcoholic version, but this version of lemonade blends well with vodka, tequila, white rum, spiced rum, or coconut rum.

Pineapple Lemonade

Southern Pineapple Lemonade (adapted from dixiecrystals.com)

Time Required: 15 minutes + chilling time, Yield: 10 8-ounce servings (10 cups)

Ingredients:

  • 4 cups water, divided
  • 1 cup granulated sugar
  • 1 cup lemon juice
  • 4 cups pineapple juice
  • pineapple chunks for garnish

Directions:

In a medium saucepan, boil 2 cups of the water with the sugar, stirring continuously until the sugar dissolves. Transfer the simple syrup to a large pitcher.

Make the simple syrup.

Add the lemon juice, remaining 2 cups of water, and the pineapple juice to the pitcher. Chill.

Add the simple syrup, pineapple juice, & lemon juice to a pitcher.

Serve over ice and garnish with pineapple chunks.

Chill & serve!
