Fall is my favorite time of year! Farmers’ markets still have fresh, local produce available for making great meals and it is just so enjoyable to be outside without the intense heat & stifling humidity of summer. I love the crisp fall days with brilliant colors on the trees and the cool nights. The nights are great sleeping weather and the still warm days make outside chores and activities pleasant.
It is definitely soup & sandwich weather. Fall is a busy time of year for my crock pot and bread maker. Slow cooking a meal or some soup all day and throwing some ingredients into the bread machine and getting a fragrant loaf of bread a few hours later is wonderful. These tools give us more time to do the outdoor things that we love like hiking & biking and still have the time needed to get the yard work done.
For this tomato bread, the touch of hot sauce gives it some spice. It makes great hot or cold sandwiches!
Cajun Tomato Bread for the bread machine (adapted from honey.com)
Yields a 1 pound loaf
Ingredients:
- 1 teaspoon active dry yeast
- 2-1/4 cups flour
- 1/2 teaspoon salt
- 1 tablespoon chopped green onion
- 1 tablespoon chopped fresh parsley
- 1 tablespoon oil
- 2 tablespoons honey
- 1/2 cup tomato juice
- 2 dashes hot sauce
- 1/2 cup water
Directions:
Place all the ingredients into bread machine in the order required by the manufacturer. listed. Select the “NORMAL” setting. Press “START.”
