We are quickly running out of August days left in this year. Usually, it is a month that seems to slowly creep by to me. Probably because I am anxious to get to the cooler and less humid weather that I love in the Fall months.
Before August ends, I wanted to post a recipe featuring cucumbers. They are the featured header picture food item this month, after all. I have made several attempts over the past few weeks to come up with a refreshing cucumber recipe. Not for lack of trying, it has taken me most of the month to find and test one that I felt was blog-worthy. A spiced chicken dish with a cucumber-tomato relish and yogurt-honey sauce was the standout dish featuring cucumbers.
Chicken with Cucumber-Tomato Relish & Yogurt-Honey Sauce (adapted from bhg.com) Total Time Required: 35 minutes, Prep Time: 20 minutes, Grill Time: 15 minutes, Makes: 4 servings
Ingredients:
- 1-1/2 pounds skinless, boneless chicken breast halves
- 2 tablespoons olive oil
- 2 teaspoons ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon cracked black pepper
- 1 medium cucumber, seeded & chopped
- 1 large tomato, chopped
- 1 small onion, finely chopped (1/4 cup)
- 1/2 teaspoon finely shredded lemon peel
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1/3 cup nonfat plain Greek yogurt
- 1 tablespoon honey
- 1 tablespoon milk
Directions:
Preheat the grill to medium. Brush the chicken breast halves with olive oil, then sprinkle them with ground cumin, salt, and pepper.
Grill the chicken, covered, directly over medium heat for 12 to 15 minutes, until they reach an internal temperature of 170º F, turning halfway through.
Meanwhile, put together the relish. In a medium bowl combine the cucumber, tomato, onion, lemon peel, lemon juice, and garlic. Stir to combine.
In a small bowl combine the yogurt, honey, and milk, whisking to combine.
To serve, top each chicken breast half with some cucumber-tomato relish and drizzle each serving with yogurt sauce.
