Still Grillin’! Tuna in Cilantro Marinade

We’ve been having great fall weather around here!  The leaves are changing, the nights are cool and the days are still in the 60s & 70s.  I love this time of year!  We haven’t had any frost yet, so the garden is still eking out a few peppers and we’ll be doing another Swiss chard harvest. I’ll be putting the garlic in the garden in the next few weeks.

This is also great grilling weather. It is getting dark pretty early, so it’s a rush to get dinner going on the grill during the week with Eric’s long hours of work, but there’s always the weekends & they have been gorgeous.  We’re getting out on the bike trails & admiring the beautiful fall colors along the path. We stop at the fish store on the way home and pick up some fresh fish brought in from Boston that very morning. Then it is off for home and relaxing on the deck before grill time. Tuna steaks are a frequent choice for the grill.

Tuna in Cilantro Marinade (adapted from food.com)  Serves  2
Total Time:  10 mins  Prep Time:  5 mins  Cook Time:  5 mins

4 tablespoons fresh cilantro, stems only, finely chopped
2 teaspoons fresh ginger, grated
2 teaspoons chili paste
2 tablespoons fresh lime juice
1 teaspoon brown sugar
2 tuna steaks

 

Directions:
Mix together the chopped cilantro stem, grated ginger, chili paste, lime juice and brown sugar.

Chop the cilantro stems and toss them with the chili paste & minced ginger.

Rub this mixture over the tuna steak and leave it on for at least a few minutes while the grill heats up to marinate the fish.

Coat both sides of the tuna steaks with the cilantro marinade.

Grill the fish over high heat for 1-4 minutes per side, depending on how done you like your fish. Serve immediately with rice or a baked potato & green beans.
