Peach Month! – Peach Compote

With the start of National Peach Month, I naturally have to post a peach recipe. It is my favorite fruit, after all! Peaches are one of the fruits that need to ripen on the tree to obtain their best flavor. For this reason, I have planted a peach tree in our yard in three of the last four homes we’ve owned. Our latest move (last fall) has left us without a peach tree of our own, but fortunately, there is a small local farm nearby that grows peaches and sells them at their on-site farm stand.

In anticipation of National Peach Month, I spent the month of July collecting peach recipes to make in August, when the local peaches are ready. This awesome peach dessert is the first of the new peach recipes I tried. The ripe peaches are first simmered in white wine & honey, then fresh mint, lemon zest & juice, brandy, and orange liqueur are added to the compote. Served with vanilla ice cream and shortbread cookies, this dessert is elegant and delicious!

Peach Compote

Peach Compote (adapted from bhgcom) Makes: 4 servings, Time Required: 25 minutes

Ingredients:

  • 1/2 cup dry white wine
  • 1/3 cup honey
  • 2 cups (about 10 ounces) peaches, peeled, pitted, and sliced
  • 1 tablespoon butter
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon grated lemon zest
  • 1 tablespoon brandy
  • 1 tablespoon Triple Sec
  • 1 tablespoon mint, chopped
  • vanilla ice cream and shortbread cookies for serving

Directions:

In a small saucepan, bring the wine, honey, and peaches to boiling. Reduce the heat and simmer the peaches, uncovered, until the fruit is softened and the mixture is slightly thickened, about 10 minutes.

Combine the peaches, honey ,and wine in a saucepot.

Cook the peaches until they are tender and the liquid is thickened.

Swirl in the butter then remove the pot from the heat.

Add the butter to the compote.

Add the lemon juice and zest, brandy, Triple Sec, and mint to the peaches.

Stir in the brandy, Triple Sec, and mint.

Serve the peach compote warm in a bowl with a scoop of ice cream and shortbread cookies. Drizzle some of the sauce over the ice cream before serving.
